Brown beef on all sides; remove. Sauté diced root vegetables and onion until caramelized.

Add spices, sugar, vinegar and 1L water; return beef, cover and braise 2 hours.

Lift beef out and rest. Blend the vegetable sauce smooth, simmer with cream and a flour slurry.

Slice beef across the grain and warm in the sauce.
