Ingredients

  • 1.2kg beef sirloin, larded with bacon
  • 2 carrots, 1 parsnip, 1 celeriac chunk, 1 onion
  • 5 allspice berries, 5 peppercorns, 2 bay leaves, thyme
  • 100ml cream, 2 tbsp flour, 1 tbsp sugar, 2 tbsp vinegar
  • Knedlíky (bread dumplings), cranberry compote, lemon
