Ingredients

• • 1kg waxy potatoes
• • Butter
• • Salt
• • Black pepper

Method

1. 1

   Parboil potatoes 8 min; cool overnight.

   Peel and grate.

   Press into hot buttered pan; cook 15 min per side until crusty.

   Slide onto plate; cut into wedges.
