  • 2 cups black-eyed peas, soaked
  • 1/3 cup palm oil
  • 1 onion, chopped
  • 3 tomatoes + 1 scotch bonnet, blended
  • 2 tbsp tomato paste
  • 1 tsp ginger, 1 tsp garlic, 1 stock cube, salt
  • 3 ripe plantains, sliced and fried
