- • 1/3 cup palm oil
- • 1 onion, chopped
- • 3 tomatoes + 1 scotch bonnet, blended
- • 2 tbsp tomato paste
- • 1 tsp ginger, 1 tsp garlic, 1 stock cube, salt
- • 3 ripe plantains, sliced and fried
