Pad Thai

Stir-fried rice noodles with shrimp, tamarind, palm sugar and crushed peanuts — sweet, salty, sour.

Ingredients

  • 200g flat rice noodles, soaked
  • 200g shrimp, peeled
  • 2 eggs, beaten
  • 3 tbsp tamarind paste, 2 tbsp fish sauce, 2 tbsp palm sugar
  • 1 cup bean sprouts, garlic chives
  • Crushed peanuts, lime wedges

Method

    Whisk tamarind, fish sauce and palm sugar to make the sauce.

    Heat a wok screaming hot, sear shrimp 1 minute, push to side.

    Pour in eggs, scramble briefly, then add noodles and sauce. Toss 2 minutes.

    Add sprouts and chives, toss 30 seconds. Plate with peanuts and lime.
