Laufabrauð

Ingredients

• • 500g flour
• • 100g rye flour
• • 1 tsp baking powder
• • 1 tsp sugar
• • 1 tsp salt
• • 300ml hot milk
• • 30g butter
• • Oil for frying

Method

1. 1

   Whisk dry; stir in hot milk and butter to a stiff dough.

   Roll wafer-thin; cut into 15 cm discs.

   Carve traditional leaf patterns with a laufabrauðsjárn.

4. 4

   Fry a few seconds each side until crisp; drain.
