Koshari

Egypt's beloved street dish — layers of rice, lentils, macaroni, chickpeas and spiced tomato sauce, crowned with crispy onions.

Ingredients

  • 1 cup brown lentils
  • 1 cup rice
  • 1 cup small macaroni
  • 1 can chickpeas
  • 3 large onions, thinly sliced
  • 4 tomatoes, blended; 2 garlic cloves
  • 1 tsp cumin, 1 tsp coriander, chili, vinegar

Method

    Fry sliced onions in oil until deep brown. Reserve oil and onions.

    Boil lentils until tender; cook rice and macaroni separately.

    In reserved oil, sauté garlic, add tomato, spices and a splash of vinegar. Simmer 15 min.

    Layer rice, lentils, macaroni and chickpeas. Top with sauce and crispy onions.
