Ingredients
- • 3 cups long-grain rice
- • 5 tomatoes + 2 red bell peppers + 2 scotch bonnets, blended
- • 1 onion blended + 1 sliced
- • 1/2 cup vegetable oil
- • 3 tbsp tomato paste
- • 1 thumb ginger, 3 garlic cloves, grated
- • 2 bay leaves, 1 tsp curry, 1 tsp thyme
- • 3 cups chicken stock
- • Salt, 1 stock cube
