Chicken Kabsa

Fragrant Saudi rice cooked with whole chicken, tomato and warm baharat spices — a feast for sharing.

Ingredients

  • 1 whole chicken, in pieces
  • 3 cups basmati rice, soaked
  • 2 onions, 4 garlic, 1 thumb ginger
  • 4 tomatoes, 2 tbsp tomato paste
  • 2 tbsp kabsa spice mix (baharat, cardamom, cinnamon, clove, dried lime)
  • Toasted almonds and raisins to garnish

Method

    Brown chicken in oil; remove. Soften onion, garlic, ginger.

    Add tomato, paste and spices. Cook 5 min, return chicken with water to cover.

    Simmer 40 min until chicken is tender. Lift chicken out, broil to crisp skin.

    Cook rice in the spiced broth 15 min until fluffy. Plate rice, top with chicken, almonds and raisins.
