Suya Beef Skewers

Thinly sliced beef coated in spicy peanut yaji and grilled over open flame — Nigeria's iconic street food.

Ingredients

  • 500g beef sirloin, thinly sliced
  • 1/2 cup roasted peanuts, ground fine
  • 2 tbsp paprika, 1 tbsp cayenne
  • 1 tbsp ground ginger, 1 tsp garlic powder
  • 1 stock cube, 1 tsp salt
  • Vegetable oil for brushing
  • Sliced onion, tomato, cabbage to serve

Method

    Mix peanuts with all spices and stock cube to make yaji.

    Toss beef in a little oil then coat in 3/4 of the yaji. Rest 20 minutes.

    Thread onto skewers and grill over hot coals 2-3 minutes per side.

    Dust with remaining yaji and serve with raw onion, tomato and cabbage.
