Pavlova

Crisp meringue shell, marshmallow centre, whipped cream and fresh summer berries.

Ingredients

  • 6 egg whites
  • 300g caster sugar
  • 1 tsp white vinegar, 1 tsp cornstarch, 1 tsp vanilla
  • 500ml whipping cream
  • Strawberries, kiwi, passionfruit

Method

    Whip whites to soft peaks, add sugar slowly until glossy and stiff.

    Fold in vinegar, cornstarch and vanilla. Mound on lined tray into a disk.

    Bake at 120°C 1h 15m, cool fully in oven with door ajar.

    Top with whipped cream and fruit just before serving.
