Ofe Onugbu (Bitter Leaf Soup)
Classic Igbo soup of washed bitter leaves and cocoyam-thickened broth, rich with assorted meats, stockfish and palm oil.

Ingredients
- • 2 cups washed bitter leaves
- • 300g cocoyam, boiled and pounded smooth (or 3 tbsp cocoyam powder)
- • 1/3 cup palm oil
- • 500g assorted beef, tripe and ponmo, pre-boiled with stock
- • 150g stockfish, soaked; 100g smoked fish
- • 2 tbsp ground crayfish, 1 tbsp ogiri okpei
- • 2 scotch bonnets blended, 2 stock cubes, salt

Bring meat stock to a boil, drop in small lumps of cocoyam paste and simmer 10 minutes until dissolved.
