Ingredients

  • 1 whole chicken, jointed
  • 4 large onions, sliced thin
  • 3 tbsp ground sumac (plus extra)
  • 1/2 cup good olive oil
  • 1 tsp allspice, 1/2 tsp cinnamon
  • 1/3 cup pine nuts, toasted
  • 4 large taboon or naan flatbreads
  • Salt, pepper, lemon
