Ingredients

  • 1.2 kg beef shank or lamb
  • 2 preserved lemons
  • 6 garlic cloves
  • 2 tbsp smen (aged butter)
  • 1 tbsp cumin
  • 1 tbsp sweet paprika
  • 1 tsp saffron
  • Salt
  • 250 ml water
