Hausa pumpkin and groundnut soup — silky purée of roasted pumpkin enriched with peanut butter, spinach and dried fish.

Ingredients
- • 600g pumpkin, peeled and cubed
- • 1/2 cup smooth peanut butter
- • 400g beef, pre-boiled with stock
- • 100g dried fish, soaked
- • 2 tbsp daddawa, 2 scotch bonnets blended
- • 1/4 cup palm or groundnut oil
- • 3 cups chopped spinach or yakuwa leaves
- • 2 stock cubes, salt

Boil pumpkin until very soft, drain and mash or blend to a smooth purée.
