Ingredients

  • 1 large carp or sea bass (1.5kg), butterflied flat
  • 3 tbsp olive oil
  • 1 tbsp tamarind paste
  • 1 tsp turmeric, 1 tsp paprika
  • 4 garlic cloves, crushed
  • 1 lemon, salt, pepper
  • Tomatoes, onions, pickles to serve

Method

Whisk oil, tamarind, garlic, turmeric, paprika, lemon juice and salt. Rub all over the opened fish.
