  • 2L chicken stock
  • 3 tbsp Sichuan hotpot paste
  • 2 tbsp Sichuan peppercorns
  • 6 dried chillies
  • 4 garlic, 1 thumb ginger
  • Skewers of tofu, lotus root, mushrooms, greens, quail eggs, meatballs, wood ear
  • Sesame paste, chilli oil, coriander to serve
