- • 2 tbsp Sichuan peppercorns
- • 6 dried chillies
- • 4 garlic, 1 thumb ginger
- • Skewers of tofu, lotus root, mushrooms, greens, quail eggs, meatballs, wood ear
- • Sesame paste, chilli oil, coriander to serve
