  • 500g dried thick rice noodles
  • 1kg pork bones
  • 500g river snails, scrubbed
  • 30g dried tangerine peel
  • 3 star anise, 1 cinnamon
  • 6 dried chillies
  • 150g suan sun (sour bamboo shoots)
  • Peanuts, wood ear, fu zhu (tofu skin), pickled long beans, chilli oil, coriander
