Armenia's celebrated barbecue — chunks of pork or lamb marinated simply with onion, herbs and pepper, then charred over vine wood.

Ingredients

  • 1.2kg pork shoulder or lamb, cubed
  • 3 onions, grated
  • 1 bunch flat-leaf parsley, chopped
  • 1 tsp black pepper, 1 tsp paprika
  • 2 tbsp dry white wine or vinegar
  • Salt, lavash, grilled vegetables

Mix meat with grated onion, parsley, pepper, paprika, wine and salt. Marinate 4 hours.
