Silky Hummus

Velvety chickpea purée with tahini, lemon and garlic — finished with olive oil and warm spices.

Ingredients

  • 2 cups cooked chickpeas (skins removed for silkiness)
  • 1/2 cup tahini
  • Juice of 2 lemons
  • 2 garlic cloves
  • Ice water, salt, olive oil, paprika, parsley

Method

    Whip tahini with lemon and garlic until thick and pale.

    Add chickpeas, blend with ice water 1 tbsp at a time until cloud-like.

    Season with salt. Spread in a bowl with a swoosh, drizzle olive oil, dust paprika.
