Egusi Soup

Rich, nutty soup of ground melon seeds simmered with palm oil, leafy greens and assorted meats — eaten with pounded yam or fufu.

Ingredients

  • 2 cups ground egusi (melon) seeds
  • 1/2 cup palm oil
  • 500g assorted beef and tripe, pre-boiled with stock
  • 200g smoked fish, deboned
  • 2 tbsp ground crayfish
  • 2 scotch bonnets, blended
  • 1 onion, chopped
  • 2 tbsp locust beans (iru)
  • 4 cups stock
  • 4 cups chopped spinach or ugu leaves
  • 2 stock cubes, salt to taste
