Ingredients

  • 1 kg goat meat with some skin, bone-in
  • 1 onion + 2 garlic cloves + thumb of ginger, blended
  • 2 stock cubes, 1 tsp curry, 1 tsp thyme, salt
  • 4 scotch bonnets + 2 red bell peppers, roughly chopped
  • 1 large onion, diced
  • 1/4 cup vegetable oil

Method

Season goat with blended aromatics, stock cubes, curry, thyme and salt; boil 30 minutes until tender, reserve stock.
